The usual work is diagnosing a fault, sourcing the part and fitting it, on machines that are cheaper to repair than replace. Sealed refrigeration systems and gas appliances need specific certification, so not every technician can work on every machine.
Ask whether the diagnostic fee comes off the bill if you go ahead with the repair, which is common but not universal. Ask whether they can get parts for your make and model, and how long that takes. Ask what warranty covers the part and the labor. It is fair to ask outright whether the machine is worth repairing.
