Rough carpentry covers framing, subfloors, decks and structural repairs. Finish carpentry covers trim, skirting, doors, stairs and built-in cabinets, and is a different skill with a different standard of tolerance. Many carpenters do both, but the good finish joiners tend to say so.
Ask whether they do rough work, finish work or both, and ask to see photographs of the kind of job you want. Ask whether they work to your drawings or expect to design it themselves. Ask whether materials are in the quote and who chooses the timber grade, which makes a large difference to both price and result.
