Most of the job is preparation rather than paint: filling, sanding, caulking, masking and priming. Exterior work adds washing down, scraping and dealing with rot before anything is coated. The finish you end up with is decided almost entirely by what happened before the first coat.
Ask exactly what preparation is included, because this is where quotes differ most and where a cheap price hides. Ask how many coats and whether that is over primer. Ask who supplies the paint and which product, since trade and premium lines from the same brand behave very differently. For an older house, ask how they handle lead paint.
